The Oh She Glows Cookbook was added to my cookbook collection as a way to infuse more vegetables into my life. I assumed bringing a vegetarian/vegan cookbook (or three) into my life would be a great way of accomplishing that.
I flipped through, bookmarked several recipes, and set my sights on making this soup:
I’m a huge fan of spices (and sugar and everything nice). The inclusion of curry powder in this recipe was a huge plus for me. The only problem was that my pantry was/is poorly stocked (to an embarrassing degree). I ended up buying a lot of spices just to make this recipe. I’ve ended up using most of them many many times afterwards so they’ve been a good investment.
The result of my soup making attempt:

Again, my food photography skills leave something to be desired. But, I’d say it looks pretty similar regardless. It tasted FANTASTIC! Lots of veggies and different textures so you didn’t just feel like you were nomming on cauliflower the whole time.
The recipe in the book says it serves four. Which could be true if four people eat huge bowls of soup. I had enough leftover for an entire week of meals and ended up freezing half of it for later.
